Since I'm less than 90 days away from my next iron distance race, I figured I better get my eating cleaned up so that I can move back into "that phase" of my race prep. That phase where I eat to fuel the ass-kicking workouts for the week. The phase where what I eat helps not only to fuel but to help me recover. Eat to train, instead of train to eat.
You can flip back to 2009 and see some similar posts. Last time, I hired a nutritionist to help me figure out what I needed to do. I learned a lot, so this time, I'm giving it a go on my own. I've gathered a number of recipe books to help keep things interesting because I tend to just eat the same things over and over again. Why? Because I prefer to graze instead of cook. I buy a bunch of stuff at the store, then I eat off of that for the week. I like to get inspiration from recipes, but I like to make it my own.
Today for lunch I created something that I wanted to share. It was so flavorful and yummy - I wished I had made more than my single serving portion! (ahh...portion control....another thing I have to focus on) The recipe is very grazy-thrown-together. I opened the fridge, I pulled from what I had, and came up with this beauty.
Chicken and Rice w/ Spinach, Tomato and Feta
Tsp chopped garlic
Salt
Bring to temp
Add Small handful of spinach...start to sauté, but don't overcook.
Add one chopped roma tomato. Bring the tomatoes to temp.
Add in pre-cooked rice (mine was cold, right from the fridge) and rotisserie chicken (same thing - cold!). Bring everything to temp. Add salt and garlic pepper to taste.
Sprinkle with feta. Mix it in to warm.
Serve!

Sounds so yummy. Easy enough for me. I'm like you, I don't really like to cook, certainly not patient enough for chicken in a pot

Neither the wife nor I like to cook either. it is easier when we are in the eat to train phase as the mindset of "tastes good" doesn't matter!!
